After a long cold winter, the days come when temperatures climb above freezing during the day, and dip below freezing at night. This is the time we get busy setting hundreds of taps for the year’s maple sap run.  After the taps are set, the process of gathering and boiling sap begins. It’s one of our favorite times of year; when the sun falls warm on your face and the smell of boiling sap fills the air. The Sap Run can start anytime of the year and will last as long as the weather cooperates, although we typically start in March and into early April.  As the run starts out we get our lightest grade of syrup, which is mild in flavor and lighter in color.  As we continue through the season the syrup darkens and develops a rich and bold maple flavoring.  We bottle our syrup in quart and pint jars.
